Rigatelli Pasta with Senatore Cappelli Grain 17.6 oz (pack of 4)

The Senatore Cappelli Durum Wheat was selected at the beginning of the last century by geneticist Nazzareno Strampelli because of of its high quality. It is rich in “beards”, graminaceous filaments, and very hard. This means that pasta made from this grain is always “al dente”. It also contains lower gluten than regular variety wheat which makes it suitable for a low gluten diet. For decades it remained the most popular wheat variety in southern Italy. However, given its low agricultural yield, it nearly disappeared from the marketplace in the 70s. Fortunately, it has been rediscovered by a select number of farmers, mainly in the Puglia region of Italy. Research has shown that this variety of grain is not contaminated by mutagenesis by virtue of its excellent organoleptic and nutritional characteristics. It is suitable for organic farming as it grows very high and is not affected by weeds.

It was named after Senatore Cappelli, supporter and promoter of ancient wheat varieties.
